Amy's Taco Salad

I got this idea for Taco Salad from my best friend! My non-salad, non-spinach eating husband even eats it up and loves it! First I found these at HEB cause Eric wanted some crunch too. Yummy!

Then put a giant handful of baby spinach on your plate...
Cook some ground turkey in a skillet until fully cooked. Add mild taco seasoning and let it simmer for a few minutes.

Spoon some of your meat mixture onto your spinach, and sprinkle all of your desired toppings onto the top. We add shredded cheddar cheese, diced tomatoes, a spoonful of sour cream, and the tortilla crunchies.

This takes me about 15 minutes start to finish! And it's sooooo good!!
