World's Best (Healthy) Pancakes

I love pancakes SOOOOOO much! But I wanted to make healthier pancakes for my kids than just the buttermilk ones you get as a mix from the store. My mom used to make whole wheat pancakes from scratch but those were never my favorite. Well, I have found the ultimate yummy pancake recipe that will allow you to give them to your kids, guilt-free!! And you will enjoy them too.

MckMama (Jennifer) regularly makes up healthy and delicious recipes and puts them on her blog. I got this one from her and made it a few weeks ago. The girls gobbled it up, all while saying, "MMMM!!!" after every bite. They are so rich and yummy, you don't even need syrup. A drizzle of honey is good on them, or you can eat them warm like bread. That's what the twins and I did!!

I wanted to make them today while the girls napped so they would be made and ready for tomorrow morning's breakfast, but since I was out of bananas and yogurt, I modified the recipe a little...they were still fantastic!

MckPancakes

2 c. regular old pancake mix
dash cinnamon
1/2 c. flaxseed meal

1 1/2 c. water

1/2 c. almond butter
1 tsp. flaxseed oil (I don't have any of this yet, so I used some good olive oil)
1 banana (or pumpkin, like I did today!)
1 egg
1/3 c. plain, whole yogurt (I was out of this too, so I used a Yo Baby, Banana Yogurt..perfect amount and really healthy!)
1/4 c. honey


In a large mixing bowl, blend pancake mix, flaxseed meal and cinnamon. Set aside.

In blender, combine almond butter, oil, egg, honey, yogurt and banana. Blend until smooth.

Add blended mixture and water to the dry mix. Stir together well. Make pancakes out of the batter.

Bows and Clips

Well I have been practicing, and practicing, and practicing...and I finally make bows that are worthy of being seen and worn. :) Here is what I made the past 2 nap times! They are fast and easy to make too...now on to the tutus again! Yea!


Lexi wanted to model the ladybug and bumblebee clips!! Eric has challenged me to make a dolphin...ha ha! He better watch out or I just might make one too.

A Girl and Her Dog

I absolutely love the fact that the girls are being raised with dogs. Now, this doesn't take away from the fact that owning pets can be a royal pain in the butt sometimes, but they are worth it! :)

The girls have been aware of their doggies since they were in the womb...in fact, Toby started sitting on top of my tummy and snuggling with it before I knew I was pregnant. Lately, Lexi has been really interested in Toby's bed. We usually don't let them mess with it, since we want Toby to have his own spot, but the other day, Lexi ran off to my room when the baby gate was down and sat right in Toby's little bed. No worries, it had also just been washed the previous evening. She was so proud of herself and gave me the biggest, cheesiest smile she could muster.

Then yesterday morning, Lilly laid down next to Sneezy on a blanket that we had all been sitting on to watch a few minutes of Elmo. They ended up snuggling for about 10 minutes. I can't get enough of them together..what a cute pair!!

Somebody is ticklish too...
I am very thankful that the girls love their dogs and that the dogs seem to love the girls too!! If Eric or I tell the girls to be "gentle", then they pat them very softly. It is really sweet to see them take care of their buddies!!

Ahh, Sunday...

Lilly just wanted to say, "Boo!!" I love her crazy, wet hair! She is such a funny and sweet kid!

Random Things

Not a lot going around here lately. We are thankful for all the rain and really glad that it didn't flood the house. I have never seen that much water in our yard before..yikes! We spent a good 3 days enjoying watching it pour outside and hanging out together. The girls seem to love the rain and will sit at the back door for a long time just watching it come down. Then we were able to go visit family yesterday for cousin Tristan's 4th birthday party..pictures to come later! We had such a good time. The girls had cake and their first taste of candy. I let them have a few licks of a grape sucker. They eat sooooo well and love healthy stuff, so I want to allow them to try new things, like candy, without them getting too used to having it all the time.

My friend, Jessica, got the girls these super cute little elephants made out of ribbon and I just put them onto alligator clips...aren't they adorable?!! Thanks, Jessica!! The girls make their elephant noises whenever they see these clips. I think I may try to make several little critters with ribbon this week.

I just love this picture of Lexi eating her pasta. They have now learned how to slurp a noodle into their mouths.
This one cracks me up. Clearly Lilly was getting full and decided to check out what was on the bottom of her plate instead of eat what was on top of it.
The girls just started wearing size 4 shoes this week, so I was trying on the only 2 pairs that we had at the time and Lilly took off. I found her in the living room walking around so proud of her pink dress shoes.
And here is my sweet little guy as I found him last week. He now likes to sleep on our bathroom mat...not sure what that is about. As long as he is comfy, then I am fine with it. I gave both dogs a bath this afternoon and got them all cleaned up. I think they feel better, because neither one of them has moved off their beds since the bath.
