Havin' Fun!!

We are just trying to stay cool and have some fun this week! Today it poured down rain and the girls were super excited to splash in puddles...while Mommy was trying to hurry them into the car. They got soaked and were SO happy!

Lexi and her friend Garrett played together while occasionally taking the time to hold hands...the girls love their friend! Sweet Garrett just wanted to take their hands and lead them to go play on the playground.
I gave them bandaids on their fingers because they were grumpy. :)

Amy's Taco Salad

I got this idea for Taco Salad from my best friend! My non-salad, non-spinach eating husband even eats it up and loves it! First I found these at HEB cause Eric wanted some crunch too. Yummy!

Then put a giant handful of baby spinach on your plate...

Cook some ground turkey in a skillet until fully cooked. Add mild taco seasoning and let it simmer for a few minutes.

Spoon some of your meat mixture onto your spinach, and sprinkle all of your desired toppings onto the top. We add shredded cheddar cheese, diced tomatoes, a spoonful of sour cream, and the tortilla crunchies.

This takes me about 15 minutes start to finish! And it's sooooo good!!

Daddy!

Around here, we really love this guy!! I always knew he was going to be a wonderful father, and I am so thankful for him! These girls are pretty over the moon for him...as I type this, he is gone overnight for a quick trip home. Lilly just blew kisses to this picture on the computer screen and said, "Awww, I love you, Daddy! I miss you! I love you!"
